Spelt matzah

I can eat spelt but not wheat. Here's where I order my spelt matzah from, they also have not-kosher-for-Passover matzah which is quite good:

If you know someone who can eat spelt but not wheat, let them know!

Also, I heard spelt is the more traditional grain for matzah, and IMO, it tastes better.

    does anyone have a recipe for spelt challah...i've made just replacing the spelt for wheat flour but the consistency is different...

      I think I saw some Manischewitz (or some other common brand) spelt matzah at Albertson's a few weeks ago!

      I've found that in general you can replace spelt 1 to 1 with AP Flour or Bread Flour. I generally use 2.5 t of yeast for about 4-5 C. flour. You'll probably want to work the spelt a little longer, and do at least two rises before shaping the loaves and rising again.

      Last weekend I used the basic challah recipe from A Blessing Of Bread by Maggie Glezer.

      Other than cutting the recipe a little (I used 4 cups of flour instead of 7, and measured accordingly) I added a healthy pinch of saffron to help give it a lovely yellow color.

      It's a wonderful cookbook. I made the challah with bread flour, but made pita from spelt. they were both delicious.

    Those old links are bad. If anyone can't buy locally, here's a link to the cheapest place I've found online for it this year, though the shipping is steep...so I'm going to scour the stores before I order from them.
